In the Preferred Applications dialog in the Mail Reader section, there is a textedit to enter a command for a mail reader, but now Browse button to find the application using a file-picker. This is inconsistent with other parts of GNOME, and therefore Ubuntu.

The text entry for mail and web browsers is gone in GNOME 3. If you want to setup another mail client than the ones listed, you'll need to create and install a .desktop file to launch the application, which handles the x-scheme-handler/mailto mime-type.
