If you select a contact that has more than one email address, then in the contact preview, you get a list of addresses. If you right click one address and select "Copy email address", then Evolution does the right thing; it copies the email address you clicked on to the clipboard. If, however, you select "send message to", then Evolution consistently opens the mail composer using the first email address as recipient. This may cause you to send a message to the wrong address.

This seems to be working fine in Evolution 2.30.  Can you give that a try?
