Evolution closes seemingly at random, sometimes when reading mail, at other times I've been on another desktop using another program.

Apport tells me that I don't have enough memory to report to developers, although it has successfully reported a bug on another program on this machine.

I have Ubuntu 10.04, Evo 2.28.3

Without a stack trace from the crash it's very hard to determine what caused it.
Can you get us a stack trace? Please see http://live.gnome.org/GettingTraces for more information on how to do so. Thanks in advance!

Well, I thought I'd installed Bug Buddy, but obviously I haven't as when Evo crashed today I just got the standard apport msg telling me there wasn't enough memory to make a report. :(

The version of Bug Buddy I have installed is 2.28.0+dfsg-0ubuntu1, which shows as the latest.

Is that what I should have installed?

I got a report of sorts from Apport:
The program crashed on an assertion failure, but the message could not be retrieved. Apport does not support reporting these crashes.

I didn't get anything from Bug Buddy.

May be you can give a try with gdb. See http://live.gnome.org/GettingTraces/Details#gdb-not-yet-running for details about how to do this.
