If you click the edit button next to the tasks or appointments portion of the clock applet it opens a new evolution window, but the new window is not focussed on the tasks/calendar component.  I wrote a fix for ubuntu and there was a suggestion that I submit the patch here.  Not exactly sure how to do that though, so I'll say that the packages, along with diff files, can be found at:

bugzilla.gnome.org is being replaced by gitlab.gnome.org. We are closing all
old feature requests in Bugzilla which have not seen updates for many years.

If you still use gnome-panel and if you are still requesting this feature in a currently supported version of GNOME (currently that would be 3.38), then please feel free to report it at https://gitlab.gnome.org/GNOME/gnome-panel/-/issues/
