There is no option to disable the capslock key.
There are too many options given for the capslock behaviour (10), not including capslock as control key.

The most useful option, capslock as control key, isn't under capslock behaviour, but under control key behaviour !?!

This is not controlled by gnome. The info comes from xkeyboard-config. Please file report @ bugs.freedesktop.org
