I've disabled the menu button in titlebar with the following procedure

1) launch gconf-editor
2) set the registry key apps->metacity->general->button_layout=close,minimize,maximize 

the result is three button on the left of the titlebar as set in the key, but a fourth button, the menu button, appears on the right side of the titlebar.
