when trying to transcode a 4.5GB matroska container with multiple AC3 tracks
and H.264 video track + subtitles nothing happens (attaching mkvinfo)

I also see "Transcoding Progress" but there's not %, no debug message and no
new video file in ~/Videos

My guess is that you tried to remux the file? If so that is a known bug due to missing ac3parser in GStreamer.

I used "copy" for audio. Ant it was AC3

No need to close as notgnome. GStreamer is also in this bugzilla, so when I got GStreamer bugs I can just re-assign them to that or make them depend on a relevant GStreamer bug.
