The right and left arrow keys are currently unused in list view.

The arrow keys are more convenient to use because you have vour fingers on the up/down arrow keys anyway when navigating a folder tree by keyboard. Right/left are usually next to up/down while plus/minus are not.

I suggest that nautilus expands a folder when pressing "+" or right and collapses it when pressing "-" or left.
(BTW: This is how windows explorer's tree view does it)

You can use Shift-Right/Shift-Left or +/- to expand/collapse.

Marking as a duplicate of bug 105895 as it's actually a gtk+ issue.
