When I send multiple message to a contact, Empathy shows only one Timestamp along with my name in the header. There should be timestamps for every message sent similarly to Adium rather than only one timestamp on the contact header.

Simply select one in the preference dialog.

Atm, you can't. In the future you'll be able to set adium themes.
