The album cover plugin downloads the album cover from the internet. However, I've spent a lot of time attaching pictures via iTunes, and these pictures aren't picked up or used.

I'm *assuming* iTunes uses the APIC field to store the picture, in which case, Banshee should look to this field first to see if any picture data exists before going to the internet.
