Gnome panel clock applet is hardcoded to launch evolution. It should pull a program from gconf. For instance, dates users have been itching to be able to set it to use dates.

Proposed patch attached. 
Further thougths: It might be better to set the prefrence globally in the panel prefrences rather than on a per applet basis.
