When in Multi or Single line edit fields, control + backspace normally deletes the word to the left of the cursor.  In Pidgin, Orca reads the word that is being deleted correctly however in evolution, gedit or open office, Orca does not.  Similarly, when deleting using the backspace key alone by character in the gnome-terminal Orca does not speak the letter that has just been removed.

I have just verified that in all of the examples you mention, Orca now speaks the correct information.
