Can you explain why we need microphone mute? There is audio-volume-muted in status if that's applicable.

To indicate microphone sensitivity in a volume control dialog, I would suggest using two status icons: microphone-sensitivity-low and microphone-sensitivity-high. I've added three states to be consistent with the volume icons + the muted icons to both gnome-icon-theme and the gnome-icon-theme-symbolic.
