paper type (I use Letter, not A4), color (I use grayscale), and maybe DPI, are not remembered. They should be :)

This is on gnome scan 0.5.1

They will be.

Per app saving in gconf is a planned feature. 0.5.1 is a kind of "alpha 1" before 0.6.0 release.

Actually, this bug is a bit different from windows size. Anyway, it's fixed in 0.5.92.
