In bug 398902 Matthew East & I updated the UG in preparation for the inclusion of the new Control Center in Gnome 2.18.
The new Control Center has been pushed to the next release due to bugs.

So we need to reverse the changes we made:
- we split up the Configuring Your Desktop chapter into subsections
- we changed mentions of the System->Prefs menu to the Control Center

HOWEVER, it's not as simple as reverting the patches, as we also made quite a few general improvements along the way.

Fixed.

Kept the categories as they improve clarity (and it saves a heap of work we'll
only have to revert AGAIN next cycle).
