I'd love to have a fullscreen or 'no distraction' mode, a la:

http://www.hogbaysoftware.com/product/writeroom

or 

http://www.blue-tec.com/ulysses/

I haven't been able to use them personally, but I've seen several reports that people find them useful in reducing clutter and distraction while they are writing large documents. In particular, writeroom (first link) seems to be gaining a cult following on the mac.

Not exactly the same thing, but as a first you could try the full screen plugin listed on http://live.gnome.org/Gedit/Plugins
