What were you doing when the application crashed?
I've attached a 31 MB pdf file and sent the mail. IF was bounced by the receiving mailserver (qmail - mailbox full). The bounce mail reproducible made evolution eat all cpu and made the system noreactive. The evolution status line said "formatting message...". I had to manually edit the Inbox file and delete the attachment which solved the problem.
