Sowohl im normalen, als auch im Vollbildmodus [F11] sollte die Seitenzahl im Edit-Feld geändert werden können.

Reasontly I opened a pdf document with the evince. When I switched to fullscreen mode in this 100 page document I wasn't able to change the page number in the upper panel.

Thanks for reporting, this bug is already tracked in our system. I hope it will be solved soon.
