I can't reproduce it. What evince and poppler version are you using?
no crash with evince 0.5.2 and poppler 0.5.1
With my Ubuntu 5.10 for AMD64, evince is 0.4.0 and poppler is 0.4.2.
Then it's probably fixed in recent versions, could you try again with a recent version of evince, please?
I am running Ubuntu Dapper (beta) and do not see the crash. Marc, if you are brave you can upgrade to Dapper already (pretty stable as it will be released in two weeks).
