If I hide the controls (View->Show Controls), close Totem and then restart
Totem, then the controls are again visible. Would like to have this persistent
(like the View->Sidebar option which is persistent).

This is normal. We don't want users who press 'H' or the menu item by accident to find themselves in the same setup once they exited the application.
"totem --toggle-controls" will start with the controls hidden. Is that adequate?

works for me though it would be smoother if totem checked for this option before showing the controls. as it stands, totem displays the controls and then hides them again, resulting in a brief flash and a window resize.
