I would like to be able to change properties of the directory listing part of
the file chooser.  For example, to hide columns such as Last Modified, display
other kinds of columns, etc.   

Even just stable functions to access certain sub-widgets without needing to
traverse the container hierarchy (which is of course always subject to change)
would be useful.

Those properties should be under the user's control, not the program's.  See bug #141155 for a better alternative; the file chooser shold share its column settings with Nautilus.
