The toolbar in evince can be edited to ones personal taste. Good! However,
there's no way to reset the toolbar to the default settings. I think an extra
button in the Toolbar editor should do.

for information, i discover that bug report thanks to Sebastien Bacher. I've reported in launchpad/ubuntu that similar bug for Epiphany but also Evince and Eye of GNOME.
Eye of GNOME has already a fix for its next release.

i also pointed out the fact that maybe the method to configure toolbars should be unified :
Evince : go to Edition>toolbars menu
New Eye of GNOME (v. 2.20) : go to Edition>toolbars menu (same as Evince)
Epiphany : go to view>toolbar>personalize toolbar (same as Firefox which is non a "gnome software" but is an "ubuntu software")

This is obsolete now, there isn't a toolbar editor anymore.
