It should be possible to at least

- see the size of each file
- see the Modified info in more detail (fe. for files modified "today", the
exact modification time)

The customization of shown info would logically happen such that right clicking
the file list headings opens a dialog that allows customizing the shown fields.

Would need a treeview column editor like the one in libegg.

I'll mark this as a duplicate for now.  The idea is to share those settings with
Nautilus.
