The current gnome-dictionary can't be used to lookup words in languages other
than English unless another dictionary server is used (then it makes it painful
to switch between dictionaries).

Wiktionary could be used to support more languages: http://wiktionary.org/

the new gnome-dictionary makes dictionary switching a lot less painful now.
