According to the HIG
http://developer.gnome.org/projects/gup/hig/2.0/menus-standard.html#menu-standard-view
the following shortcuts should be used

Zoom In  Ctrl++
Zoom Out Ctrl+-
Normal Size Ctrl+0
Full Screen  F11

Probably Normal Size is a better name for the menu item then Zoom Reset

BTW it would be nice if the Zoom In would also work if you do Ctrl plus the key
contain the "=" and the "+". That is the key on the right of the digit row on a
US keyboard
