The addressbook conduit can't manipulate the private settings for a record
because evolution doesn't have a spot to store the information.

In 1.6 we will support VCard 3.0 which has the CLASS attribute for this
type of thing.

gnome-pilot integration was removed from Evolution in 2.31.x. See http://git.gnome.org/browse/evolution/commit/?id=333897772f2cf3251915800aff2c836f02095c84 for the reasons.
If your issue is still a problem, please file a bug against "gnome-pilot" instead.
