Add a "Domain to add to unqualified address" option.

Other mail programs like Pine and Eudora allow their users to specify a default domain to add to the end of a "To:" address that doesn't contain an @somewhere.com. It would be great if Evolution had such an option. I'm a university student, and most of the email I send goes to another address within the stanford.edu domain. I'd love to be able to type "jsmith" in the "To:" line and have Evolution automatically convert that to "jsmith@stanford.edu" when sending (perhaps with an optional popup showing the conversion). It seems that many people would benefit from this feature.
