I do pdf presentations and I need to have a fullscreen switch somewhere so
that only my pdf shows (no menu, no "exit fullscreen mode" button...).

I would be delighted if you could add that to evince.

There is now a fullscreen mode in evince - you can disable the toolbar and
sidebar, then switch to fullscreen mode, and the only element that appears is
the "exit fullscreen mode" button.

You specify that you "need to have a fullscreen switch somewhere". Indeed, where
do you put this switch if only your pdf shows ?

There is also a plan to auto-hide the toolbar / exit fullscreen switch.
