Using Gnome built with gnome-panel 2.6.1 source tarball

- Change the theme to High Contrast Large Print Inverse
- Open main menu and go to Preferences -> Accessibility

 Notice that the Assistive Technology Support icon does not change to suit this
 accessible theme.

It should have the following versions:

  High Contrast
  High Contrast Inverse
  Low Contrast
  Low Contrast Inverse

There are now High Contrast and High Contrast Inverse versions of this icon.
However, there is still no Low Contrast version of this icon.

(there is no such thing as Low Contrast Inverse, by the way)
