In chapter "More on factories", section "Creating elements with the factory" one can 
read  
 
"In the previous section we described how you could obtain an element factory 
using MIME types." 
 
However, I cannot find information of mapping a MIME type to the element factory 
in the previous section.

Because it doesn't exist. We're working on updating the application development
manual, so I'll merge this bug with the tracker for that.
