When the gnome is set to the dark-theme evolution follows suite and displays white texts on a dark background. 
Only for the email lists and for the (text) editor a black font is used which is eligible on a dark background.

On the email list and in the editor use the white font.

Thanks for taking the time to report this bug.
This particular bug has already been reported into our bug tracking system, but we are happy to tell you that the problem has already been fixed. It should be solved in the next software version. You may want to check for a software upgrade.
