It seems that deleting attachments should be a feature using Evolution (as listed in http://www.go-evolution.org/Attachments), but none of the four methods mentioned there seems to work.

Is this a feature or for what version is this planned?

I believe that page is a set of regression tests for attachments.  Attachments can only be deleted while composing a message.  The page isn't very clear about that, but you can kind of infer it from the summary:

   "The user should be able to delete attachments that were added by him"

I tested this, and the fourth method was the only one that didn't work for me:

   iv) Select more than one attachment, right-click and select remove

When I select more than one attachment and right-click on one of them, the multiple selection is lost and only the attachment I clicked on is highlighted.

Sorry, I didn't understand it that way.

I think it is very important for users to be able to remove attachments from incoming messages. Would it be possible to include this plugin (http://people.debian.org.tw/~chihchun/2006/10/23/remove-attachments-plugin-for-evolution-001/) in Evolution?

Yes, I think that the possibility to delete attachments from incoming mail really should be included in Evolution. Many other email programs provide this kind of functionality, and it really makes sense. Especially with IMAP mailboxes that often provide far less space than your local hard drive, the deletion of attachments is a necessary feature.

Looks like a good start, assuming it works correctly.  I'm opposed to adding something like this as a plugin, but would be good to integrate directly into the core application.  Can you please file a separate bug for this as an enhancement request?

err. well. reopen bug 205927 instead of filing bug 522989 instead, but i'd prefer to have mbarnes doing this as i'd open a can of worms.

Sorry for not answering before, Matthew.

If this bug is about deleting attachments form messages composed by the user, there is not such a bug. I was reporting the issue because of my misunderstanding of the description provided at http://www.go-evolution.org/Attachments.

I'm closing the bug now (since I reported it). Sorry for the inconveniences,
