When I right-click on a launcher created by the Connect To Server dialog I
have to unmount it if I want to get rid of it. I this is confusing for the
user, these launchers should be "deleted" not "unmounted".

I agree, this terminology bothers me as well. I also think it shouldn't be
called a Volume when it's a remote connection. I think something along the lines
of "Delete Shortcut to Network Folder" might look better.

This bug is still present in nautilus 2.7.2.

Actually a bug 164406 is a duplicate of this, but marking the other way around
because of a better description in the other bug.
