For you first category organization, you get greeted by a empty box and need to press the add button before being able to create your first category.

It would be nice if the first time you organize a couple of items in Documents, it would start with the empty entry field selected and perhaps some hinting text along the lines of "type the name of your category" or something like that.

Yeah, that dialog is far from optimal. Allan promised me a mockup in bug 687651 :)
I'll close this as a duplicate of that one, since the fundamental issue is the same.
