Please describe the problem:
File / Print Setup... / Paper size should be autoconfigured to A4 (when you are in Europe and A4 is your default setting according to more general printer settings). Also this settings should be stored in evince preferences so that (even if it is changed to another format or not) the next time evince is used, the setting is recovered. This also goes for Orientation in the same menu.

Also File / Print does not remember previous selections as General (which printer) and printer specific and all settings in other tabs like Page Setup, Job, Image Quality, Advanced. Many of these settings can be autoconfigured with more general printer setting and should be remembered for the next time print in evince is used.

Seems like this is a more general issue with the print UI...why should evince or any one app that uses a standard dialog handle this type of system-wide (or at least "for all apps for this user") preference?

This particular bug has already been reported into our bug tracking system, but we are happy to tell you that the problem has already been fixed. It should be solved in the next software version. You may want to check for a software upgrade.
