This enhancement request was filed in the Ubuntu bug tracker at https://bugs.launchpad.net/ubuntu/+source/evince/+bug/360152 :

"The search capability in Evince is somewhat limited. It only does case-insensitive search, and does not use regexps. Adding options for either case-sensitive search or regexp search would add to the utility of this application."

The search bar in 3.10 allows the user to chose "Case sensitive" and "Whole word". You have to click on the grey icon inside the search box.
