I'd like to plot error bars in polar plots (in r and theta), 
something looking like: http://root.cern.ch/root/html520/TGraphPolar.html 
with the traditional Gnumeric error display style (lines' thickness, color, display (none, both, negative, positive), ...).

I'm not skilled enough yet to create a patch. 
Could someone handle it please?

Error bars have been implemented in polar and radar plots. The feature will be in the next release.
