The dialog's "ok" button says 'Record', not 'Render' - even though, to get to the dialog, I press on 'Render Project' button and it says 'Render' in the dialog name. So what I'd like to do is render, not record...

Due to string freeze, we can't fix this for the upcoming 0.11.3 release, but
I'm marking it as a blocker for the following release.

I'd say that the use of the "recording" icon is wrong too. Perhaps using gtk's "yes", "run" or "convert" stock icons would be more appropriate.
