GStreamer sinks generally have parameters (such has "device") to give a chance to the application to select the desired sound card.

If you did not do it, check gnome-sound-properties.

If you have 4 sound cards, you should use PulseAudio anyway :)

In gstreamer-properties I can select a card only with "Custom" but the "device" parameter is not well documented.

I still can't select sound input from non default audio card in gnome-sound-recorder

gnome-volume-control for example, has option "File" -> "Change device"

gnome-sound-properties provides you with a drop-down list of available cards/devices/outputs. If that doesn't work right, please file a new bug against gnome-sound-properties, or re-open this one. Thanks!
