Gnucash doesn't create guid for newly saved check format files.

The print check dialog should remember which format was the last you used and select that by default instead of the format on the top of the list. I would think that most people have 1 type of check they are printing and would rather not have to dig through the list each time for it.
uhh.. I guess this is actually a bug and not an enhancement. It already remembers the last format unless that last format was one from the user's custom check formats (from ~/.gnucash/checks).
I do not see this problem. GnuCash remembers the guid of the last *used* check format. If you clicked Cancel instead of Print, gnucash forets all the changes you have made in the dialog.
The bug only occurs if your last used format was a custom check. (one of the ones in ~/.gnucash/checks). I can print a check using my custom format, then go right back to file_>print check and it'll have "Deluxe Persoanl Checks..." in the Check format field, not the format I just printed. FWIW, this is in Windows, as I don't have the linux machine set up to print.
