Make esd optional

* adds configure --disable-esd
* s/start_esd/start_gnome_sound ...
* enable GNOME sound if esd disabled (by default)
* hide "Enable Sound Software mixing" checkbox if esd disabled

it also removes ESDSERVERDIR (used nowhere) and correct a --s/disable/enable-alsa help message
