Look in Desktop User Guide -> Configuring Your Desktop -> Preferred Applications.

It talks about four tabs in this dialog, one for web browser, one for mail client, one for text editor, and one for terminal emulator.

Correct version:
The new Preferred Applications dialog is completely different: there are only two tabs: "Internet" which contains settings for browser and email client, and "System" which contains settings for the terminal emulator.  There is no ability to set text editor at all anymore.

Also, the specific options for each item are different than the ones in the tables in the documentation.
