That bug has been opened on https://launchpad.net/distros/ubuntu/+source/file-roller/+bug/40057

"If you select a file in an archive, and right click, then go to Open Files...; a dialog appears. You can add applications to the bottom list. If you try to delete them with the button, they dissappear in the list, but if you close the dialog and open it again, the applications that you deleted will still be there."
