Thanks for your bug. What kind of theme do you delete? Could you get a backtrace with gnome-control-center-dbg installed?
I delete a Icon Theme... to make a new test I install gnome-control-center-dbg, the "Dropline Neu!" icon theme from http://art.gnome.org/themes/icon/1100 (but can be other one) and while I am using it, I remove from the list of gnome-theme-manager.
