Nautilus' "Open with" dialog is a lot like the main-menu "Run" dialog, with the
exception that it doesn't feature the collapsible list of known applications in
the latter.
This has been mentioned as several times in discussions of the new Nautilus MIME
system. For the sake of consistency and easier application discovery, that list
should be added to the "Open with" dialog, too. After all, it takes a seasoned
user to know all the different /bin locations to look in when searching for an
application with a simple file browser, and binary names are often completely
nonobvious.

Also, there should be two additional checkboxes when selecting the "other
application"

1) for "always open this type with this application"
2) for "always open only this file with this application"

Users should not need to reselect the application every time unless they somehow
know to look in properties to set it.  Even if they know how to set the options
in the properties dialog, they should be able to do it at the time of selecting
the "other app" since that is more discoverable and requires many fewer clicks.

Actually right now when you enter an application in the "Open with" dialog, this
application is added to the list of Open With applications and selected as the
new default. I'm not sure this is a sensible solution - my feeling is that when
you need to add the application by hand you're not gonna use it very often.
