I did not found any way to set the font, font style and font size of
the page header or footer. The logical place would be in the workbook
formatting, but I tried every menu item that has something to do with
preferences, setup, format, etc.

This has not been implemented. In the moment you can choose between
the default font, font size and style and none at all :-)

Well, as of 1.2.2 you will be able to choose the default font in the
preference dialog (Font->Footer/Header). But you will need to restart
gnumeric before that change takes effect (that will need to change.)
