Totem 3.26 on Arch
I can reproduce using mkv, mp4 or avi multi-audio video files

1. open a multi-audio video file
2. change its audio track
3. click on the button on top right corner and open an external subtitles file (SRT)
Result: Totem changes to the first audio track.
But the audio track active in "Languages" menu is still the same you selected in step 2.
