As said in bug 787145, it would appear the logics is:

- when set to "Text", the scan is grayscale.
- when set to "Photo", it is color.

Unfortunately if you scan in text, then go back to photo mode, it stays grayscale.

Reproduction steps:

- set to "Text";
- scan; it is grayscale;
- set to "Photo";
- scan again.

Expected result: first page as grayscale, second as color.
Actual result: all pages are grayscale.

Even starting a new document, doesn't "fix" the color. The current workaround is to restart Simple Scan when I want to do color again.
