Nautilus should not change default action unless asked for that

Please describe the problem: I choose 'open with other application' and selected Epiphany for one text file. After that all text files are opened in Epiphany by default. I think Nautilus should not change default action unless asked for that. I also do not know how to change the default action for plain-text-document back to gedit.
