The option to set a 'compose key' has been removed from the keyboard settings somewhere between version 3.18 (Ubuntu-Gnome 16.04) and 3.24 (Ubuntu-Gnome 17.04).

Could you please add the drop-down select again, if this was not intentional?
Otherwise this change should be documented.

It's in gnome-tweak-tool for now.
